Rocket Pops - Healthy & Homemade

Cool off this July 4th and all summer with these fun, healthy, and homemade Rocket Pops.

 

This simple and homemade recipe takes minutes to prep - you just have to be patient to wait for them to set before you can enjoy.

 

Rocket Fruit Pops: ingredients and what you need

- stawberries

- blueberries

- coconut milk

- honey

- popsicle molds (or dixi cups)

- popsicle sticks

- blender

- wisk

 

Blend down stawberries into a slushy consistancy, pour into a bowl to reserve. 

Blend down blueberries into a slushy consistancy, pour into a bowl to reserve.

In a bowl mix with a wisk mix together the coconut milk and 2 TB of honey.

Next step will depend on how perfect you want the lines - you can pour each mix and let set in the freezer for 20 minutes then the next or pour all at once and allow them to mix a little.

Into the mold pour the strawberry slushy, then the coconut milk/honey mix, then the blueberry slushy.

 

Let freeze and enjoy! Good to the last drop and kid approved - I say that is a Win Win with all of the added sugars you will find in other popsicles.
