Little Green Monster Muffins *vegan
Trying new recipes is something I make an effort to do at least once a week. Often times it is a healthier version of something to see if our daughter will like it and expand the items we circulate through for meals and snacks.
It is always a fun for me to approach this like a “Chopped Chef Challenge” and use produce that maybe on its last leg. Today’s challenge - spinach meets … Green Monster Muffins (vegan).
The original recipe was found and inspired by Easy Toddler Meals this recipe on Pinterest (click here to view). However, like most times I didn't have all of the exact ingredients and wanted to make some alterations due to that and the level of sugar and salt in the recipe.
Excited to share this simple recipe that was a hit for both our 17 month old and myself. As you will see we sampled a few for a mid breakfast snack! This recipe made a ton and I will be attempting to freeze some for easy reheat snacks in the future.
Lean Green Monster Muffins (vegan) Ingredients:
Wet ingredients in a blender and blend until smooth
1 ½ cups spinach
1 cup unsweetened applesauce
1 ripe banana
1 TB sugar
3 TB coconut oil
Dry ingredients in a bowl and mix together:
½ cup ground whole old fashioned oats
1 ½ cups of whole wheat flour
1 tsp baking powder
½ tsp baking soda
¼ tsp salt
½ cups of shredded fresh zucchini (about one medium size zucchini)
First, use a shredder on the zucchini and have set in a small bowl - set aside. Before adding to the mixture squeeze out as much excess water as you can. This is best done is you get working on the rest of the recipe and go back to give it a squeeze and pour out the water that has accumulated at the bottom of the bowl.
Combined in a blender all of the wet ingredients except for the coconut oil. Blend until smooth then add in the coconut oil blend once more.
Combined in a bowl all of the dry ingredients mix together with a fork or whisk. I had added to oats to the wet in this photo - by mistake -hey first time making something it is bound to happen!
Line a muffin tray with liners and also spray use a spoonful per muffin. (yes that is a snowman spatula - its my best one :) )
Bake at 350 for 15 -18 minutes. Let cool and enjoy! Leave me your feedback if you try this recipe out. Clearly we loved our tast testing.
